CLONAL SELECTION

Estate-selected clones from mother plants

HARVEST

Harvest of perfectly healthy clusters in the last ten days of August, hand-picked in small crates holding about 15 kg of grapes.

VINIFICATION

Soft pressing of whole grapes, exclusively single-varietal Vernaccia di San Gimignano; first fermentation of the free-run must for 40 days in natural cement tanks.
Second fermentation in bottle for 24 months during the waxing moon.

ORGANOLEPTIC EXAMINATION

Brilliant straw-yellow color with fine, persistent perlage. The nose reveals notes of white fruit, citrus, delicate florals, and nuances of bread crust and almond.
On the palate it is dry, fresh, and savory, with creamy effervescence and overall harmony. Long persistence with citrus and mineral echoes. Elegant and refined.
